Lemon Loaf Cake | Great for tea-time | Areeba’s kitchen

All purpose flour                              1 ½ cup

Soften Butter                                    ½ cup or 113 grams

Sugar                                                   ¾ cup or as required

Milk                                                  ½ cup

Eggs                                                    2 large

Vegetable oil                                       2 tablespoon

Baking powder                                 1 teaspoon

Lemon juice                                       2 tablespoon

Lemon zest                                        2 teaspoon

Salt                                                      just a pinch

In a bowl add sugar, butter and lemon zest, mix well until well combine,

Add vegetable oil, eggs and lemon juice mix well till smooth consistency occurs or pale color appears,

Sieve flour, baking powder along with salt into the liquid batter

Add milk and fold until well combine,

Pour the batter into a lined loaf tin and bake for 40 minutes at 350F/160C in a preheated oven.

Meanwhile lets make lemon glaze,

Icing sugar                                        1/3 cup

Lemon juice                                      2 tablespoon

Mix icing sugar and lemon juice until smooth consistency with no lumps,

When the toothpick inserted and came out clean means the cake is ready,

Let it rest on room temperature then pour the lemon glaze on top,

And serve, a perfect lemon loaf cake is ready in no time
