
Eggs 3 large
Spinach 1 cup (finely chopped)
Onion 1 small (finely chopped)
Cheese ¼ cup or as desired
Oil 3-4 tablespoon
Butter 1 tablespoon
Red chili flakes ½ teaspoon
Black pepper ½ teaspoon
Salt ½ teaspoon or to taste
Note : for cheese I used mozzarella and cheddar
Saute onion and spinach in 1 tablespoon oil
Until soft and tender,
When spinach is done remove the spinach and onion mixture,
Now beat egg with red chili flakes, pepper and salt
In the same pan add oil and butter,
Pour egg and let it cook on one side
Place the spinach and onion mixture on one side of omelet,
Place cheese on top of spinach, cover for a minute,
When cheese is melted flip the other side of omelet to cover the spinach part,
Gently scrap out the omelet and slide it to the place
Garnish with some spring onions and serve
