egg -plant 1 large (slices)
yogurt 1 cup
red chili powder ½ teaspoon
cumin powder ½ teaspoon
salt ½ teaspoon or to taste
for baghar
oil 4 tablespoon
onion 1 small (slices)
garlic 1 clove (slices)
botton red chilies 6 to 7
curry leave 6 to 7
cumin ½ teaspoon
green chilies 2 medium (cut into 3)
in a pan add oil around 3 tablespoon and shallow fry egg-plant,
fry till then become soft and golden, place it into a serving dish
in a bowl add yogurt, red chili powder, cumin powder and salt,
whip it well,
now pour the yogurt mixture on top of a serving dish containing egg-plant
now make a baghar,
in a pan add oil, garlic and onion,
cook till golden now add, cumin, curry leaves, botton red chilies and green chilies,
now pour the baghar on the dish,
serve cold or warm with rice or chapatti
