For dough

All purpose flour              2 cups

Ghee                                    4 tablespoon

Cumin                                  ½ teaspoon

Carom seeds                      ½ teaspoon

Salt                                      1 teaspoon

Luke warm water             to knead

Make a hard dough and let it rest for 30 minutes

For the batter

Potatoes                             4 medium (soft boiled)

Red chili flakes                 ½ teaspoon

Coriander seeds                              ½ teaspoon

Cumin                                 ½ teaspoon

Carom seeds                      ¼ teaspoon

Salt                                      ½ teaspoon as needed

Turmeric                            ½ teaspoon

Red chili powder              1 teaspoon

Dry mint                             ½ teaspoon

Fresh coriander                2 tablespoon

Green chilies                     1 medium (slices)

In a bowl add boiled potatoes and add all the ingredients

Mash it tills well combined,

Take a small portion of dough and make a ball

Roll it and an put a small amount of batter in middle

Make a slit on one side and take one side and overlap the batter and same with the other side make a shape,

Deep fry the samosay on low medium flame until golden brown

Serve warm with mint chutney or ketchup
