Waheed kabab house is a very famous Bar-be-que restaurant located in burns road, karachi

Their fry kabab is the specialty, that holds a special place in the heart of food lovers, the kababs hold a very strong flavor of spices, we have tried to make something very similar to the original, as we misses the flavor from miles away, hope you will like this recipe too, must try

Grounded beef/ veal    1 kg

Yogurt                              ½ cup

Ghee                                ½ cup

Turmeric                         ½ teaspoon

Red chili powder           1 ½ teaspoon

Raw papaya                   2 tablespoon

Ginger garlic paste       2 tablespoon

Onion                              1 large (slices)

Salt                                   1 tablespoon

For Special masala

Roasted chickpeas       2 tablespoon

Botton red chilies         8 to 10         

Kabab cheeni                10 to 12

Black cardamom           1

Cinnamon                       2 sticks

Cloves                              4 to 5

Jaifil                                  ¼ inch piece

Jawatri                             ¼ inch piece

Anise flour                       2 petals

Green cardamom           5 to 6

Pipli                                    3 sticks

Dry coriander seeds         2 tablespoon

Cumin                                 1 teaspoon

Black pepper                     1 teaspoon

Dry roast all the ingredients and grind it in to fine powder

For marinating

In grounded meat, add ginger garlic paste, yogurt, papaya paste,  red chili powder, turmeric and salt.

Mix it well and marinate it for over night or for 6 hours,

Now put the prepared masala and give some charcoal smoke (its optional)

In a pan add ghee and sliced onion, fry till onions turns golden,

Now add marinated meat and fry for few minutes,

Add 1 cup water and cook on very low flame with lid on,

When oil starts to appear and meat is tender,

Fry it a little, then give charcoal smoke,

Serve with puri paratha and onion rings
