
For Sponge
Ingredients
Eggs: 5
Icing sugar: 125 grams
Baking powder: half teasp
Flour (maida) : 125 grams
Lemon essence: 1-2 drops
Method
Beat the eggs with an egg beater, add the icing sugar and beat till the position sets i.e. for 8-10 mins. Add lemon essence in it. Then add the flour ( baking powder added) in the egg batter with a spatula very slowly.
If you want a chocolate sponge then add 1 tbsp (levelled) cocoa powder in the flour and take out 1 tbsp of flour.
For filling
Whipping cream: as required
Sugar syrup
Mixed fruit tin
Strawberry chunks
Strawberry sauce
Soak half sponge with the sugar syrup and apply the whipping cream on the sponge. Then sprinkle the fruit on top and strawberry chunks. Drizzle some strawberry sauce also. Put the other half sponge and repeat if you like more fruits, otherwise just apply cream and decorate with strawberries.
