Raw mangoes   5 kg

Green chilies   2 kg

Achar masala   500 grams

Mustard oil       3 liters

White vinegar  1 ½ cup

Salt                    as needed

Turmeric        as needed

Method

Cut raw mangoes in big sized cubes.

Blanch all the raw mangoes and green chilies.

Then apply salt and turmeric, leave them for a 12 hours on room temperature.

Take a big glass pot and clean it nicely (make sure the jar is totally dry)

Now add raw mangoes and green chilies , vinegar, achar masala and oil.

Cover the lid of the jar with some porous fabric.

Let it rest in sun for 3 days and a week on room temperature.

The achar is ready enjoy it with daal chawal or any meals
