
For chicken coating
Chicken 1 cup (boneless, cubed)
Egg 1
Soya sauce 2 tablespoon
Black pepper 1 teaspoon
Corn flour 3-4 table spoons
Marinate the chicken cubes for minimum 15 minutes then deep fry.
Garlic 4 cloves (chopped)
Chicken cube or chicken powder 2 cubes or 2 teaspoon
Pine-apple chunks 1 cup
Carrot 2 medium(slices)
Onions 1 medium(cubes)
Capsicums 2 medium (cubes)
Salt to taste
Sugar 1 teaspoon
Black pepper 1 teaspoon
Pine Apple juice ½ cup
Soya sauce 1 table spoon
Corn flour solution ½ cup
Ketchup 1 cup
Spring onions for garnish (chopped)
Method
Sauté garlic, & add cubes stir for few seconds
Add water as needed, bring water to boil.
Add all the spices and pine apple juice along with ketchup
In another frying pan use 2 tb.sp oil n for 2 min sauté all the vegetables together (dont fry to much otherwise vegetables will leave their water & texture)
Put the fried vegetables in the liquid soup
Now dissolve corn flour in water and slowly add to the soup with constant stir
Till the desire consistency occurs add fried chicken with pineapple chunks.
Garnish it with crushed black pepper and spring onions.
Serve with rice.
